Sharing with you all another coconut based dish that’s a Filipino favorite, Laing (dried taro leaves).
Here’s wachunid:
A can of coconut milk, a can of coconut cream (not in photo), a can of all purpose cream (optional), a pack (I only used half) of dried taro leaves, 1/4 kilo of pork belly (menudo cut is fine), 1/2 cup bagoong (shrimp paste), 3 cloves garlic (diced), 1 medium sized onion (chopped), 2 tbsp. ginger (thinly sliced), 3-4 pieces red chili (chopped).
Step 1: Sauté garlic and onion, ginger in 1 tbsp. oil, add pork and cook for 5 minutes.
Step 2: Add the shrimp paste, coconut milk and coconut cream. Bring to boil.
Step 3: Add the dried taro leaves and red chili. Simmer until the sauce almost dries up.
Viola!
Yummy Laing.

Bookmarked! I LOVE laing! Bummer lang, I recently became allergic to shrimp, so no bagoong for me. 🙁 Wonder what I can substitute?

Hi again Ms. Jackie! Was supposed to try it over the weekend but since we had most of the ingredients at home and my MIL brought taro leaves, we cooked it kanina. Baon ko siya sa office and it was good. Aside from the bagoong, I also added shredded daing para may laman ng konti.
