If all goes well as planned and scheduled, by the time most of you read this I have already given birth to Juro. But of course I won’t keep you hanging, I have prepared posts for all of you to enjoy.
Here’s a dish that I created for the Yummy Eats Hunt’s Mom-Child Cook Off. I think this Pork & Beans Con Carne got the attention of the judges mainly because of the herb I used to make it gourmet-ish.
Here’s wachunid:
1/2 kilo ground pork, 1 medium sized red or green bell pepper (chopped), 3-5 cloves of garlic (chopped), 1 medium sized onion (wedged), 3 tsp. butter, 1 tsp. cooking oil, a can of Hunt’s Pork & Beans, a can of corn kernel, 3 tbsp. tomato paste (not in photo), a pinch or two of thyme (can be fresh or dried-not in photo), a can of green peas (optional).
This is a very easy dish to prepare, you just add each ingredient, cook everything and let it simmer.
Step 1: Sauté garlic & onion in oil and butter.
Add the ground pork, cook until brown.
Step 2: Add pork and beans.
Add the bell pepper.
Add tomato paste.
Step 3: Add corn and a pinch or two of dried thyme leaves and simmer for 5-10 minutes until ground meat is tender.
Season with salt & pepper to taste.
Viola! Serve it with steamed rice, toasted garlic bread or even make it as a dip for tortilla chips.
This is one of the few dishes that I am proud to create from scratch. It has the thumbs up from both my hubby & my toddler who find it deliciously unique. It must’ve been the thyme that made all the difference.
