Another vegetable-pork dish that’s easy to prepare and very Filipino, meet Pinakbet or Paktbet.

Two medium sized tomatoes sliced, one medium size onion minced, 4 cloves garlic minced, about a tbsp. of ginger sliced

One medium sized squash diced, one stalk sitaw (option to add eggplant and other vegetables such as eggplant, bitter melon aka ampalaya, and okra)

1/4 kilo pork, diced, 2 tsbp. oil, 4 tbsp. shirmp paste (bagoong), 1 cup water, salt & pepper to taste.

Step 2: Add back pork, shrimp paste and sauté for 2-3 minutes before adding 1 cup of water. Boil and let simmer for 10 minutes or until pork is tender.

Step 3: Add in squash and simmer for another 5 minutes, then add string beans and the rest of the vegetables. Simmer for another 3-5 minutes. Careful not to overcook the vegetables. Season with salt & pepper.
Prep time: 10 minutes to chop ingredients
Cook time: 20-30 minutes
