Here’s one of my favorite dishes that I have come to learn how to cook. I used to frequent Pares-Pares hole-in-the-wall restaurants because of their beef pares. That sweet and salty meat dish that somewhat resembles the Chinese Style Adobo is another easy to cook dish with one not-so-secret ingredient that makes it different.
Here’s wachunid:
1 kilo beef brisket or camto, 3 cloves garlic chopped, 1 medium sized onion chopped, 3 slices ginger julienned, 2-3 pcs. star anise, 1/4 cup soy sauce, 1/4 cup brown sugar, 2-3 tbps. cooking oil, spring onion for garnishing (optional).
Step 1 & 2: Boil beef in a pot until tender. This would usually take 1-2 hours on a regular pot and about 20-30 minutes if you have a pressure cooker. Remove beef and set aside, don’t throw the beef stock. On a separate pan sauté in oil garlic, onion and ginger then add the beef.
Step 3: Add the soy sauce, sugar and star anise and the beef stock. Bring to boil. Add salt & pepper to taste.
Viola! Beef Pares.
Add spring onion for garnish.
